Should capacity be based on tons of fruit per hour?

Not directly. Cooling equipment should be sized from heat load, required temperatures and operating profile. Production throughput is useful only when the process heat balance is also known.

What ambient data is needed for a cooling tower?

Provide design wet-bulb temperature, site altitude, humidity, water quality and required approach temperature. These conditions strongly affect tower size.

Can pumps and buffer tanks be included?
